pH igra odlucujucu ulogu. Manje vode, nizi pH, usporava alfa amilaza kojoj godi malo veci pH ( 5,5-5,7). Dakle, istina je. Alfa radi fermentabilne secere.
Edit: naravno temp ukomljvanja i recept imaju vrlo vazan uticaj na pH i na enzimsku aktivnost.
