T-58
Interesantna informacija.
Safbrew T-58 is believed by many to be a dried, shelf-stable version of the Chimay Belgian Trappist ale yeast strain. It has definite Belgian-style esters and phenols. It's usually described as peppery, spicy, some banana and clove, but I wouldn't say "excessive." Of course, the warmer it ferments, the stronger it's impression becomes. High attenuator. High alcohol tolerance. Ideal fermentation temperature range is probably 15-24°C, but that's flexible. It forms a nice solid sediment which makes it ideal for bottle and cask conditioning, too.
