Ja sam radio sljedece: sirce, voda, malo soli i ulja prokuhani (1/2 sirce, 1/2 voda), zalijes narezane jalapanose u tegli ovom mjesavinom i pasterizujes. U teglu mozes dodati i kakav zacin, bijeli luk i slicno. Nakon godinu dana stojanja nije bilo problema Smile Jedino sto sam primjetio je da je komercijalni jalapeno (iz tegle) nekako hrskav a ovaj moj je bio mekan ali jednako ukusan.

Jalapeno za zimnicu
Kad se sa jalapneom stavi ulje i bjeli luk,izazovu hemisku reakciju i postane plav luk,a i jalapeno dobrim djelom.
Ne pitaj kako znam .

Mali offtopic, bijeli luk u ulju nije dobar. Razvija se potencijalno smrtonosna bakterija, zato je recimo u US izdata preporuka da se to ne radi. Ali recimo vidim da svabe to rade bez problema (bijeli luk sa chilijem u ulju odlicno).
Nista onda, sutra nastavljam kiseljenje, vec ima 5 tegli Smile

Ulje stoji na povrsini i nije uopste u dodiru sa lukom koji je kao i jalapeno potopljen u mjesavini sirceta i vode.

Sto se tice bakterija, zalijes paprike i luk kljucalom kombinacijom vode i sirceta i to ubija bakterije. Samo sirce nije bas povoljan medij za bakterije i jos pasterizujes teglu. Sanse da ikakva bakterija prezivi u tom okruzenju su, usudio bi se reci, minimalne..

Ja sam isao sa uljem i bjelim lukom par tegli,bez sirceta..za dva dana se razvila bas lijepa strumfplava boja.
Musice kako radis fermentirani jalapeno?

Tesko se moze tvrditi da ubijes sve bakterije. Zato nam se i desavaju pokvarene ture.

Oficijalno:
If not handled properly, herbs and garlic-in-oil mixtures can support growth of Clostridium botulinum, a bacterium that causes botulism. These bacteria are widespread in nature, but seldom cause problems because they can't grow when oxygen is present.

Garlic-in-oil provides an ideal environment for Clostridium botulinum, especially when the product has been stored at a temperature high enough for the bacteria to grow. When Clostridium botulinum grow in the contaminated garlic in oil, the deadly toxin can be released into the mixture. Once the bacteria start to grow, refrigerating the product slows down but does not stop the production of botulinum toxin.

Da, ali ovo sa botulinumom ti je slucaj kada stavljas bijeli luk u ulje kada nema kuhanja niti visoke temperature rastora sirceta i vode (100C). Naravno pomaze i oprano povrce jer je mehanicka cistoca preduslov za bilo kakvu dezinfekciju i sterilizaciju..

Nesto slicno kao sto je kolega iznad pisao.
Stim sto ja u vrelo sirce sipam paprike, luk i sargarepu, naseckane naravno. Oko 2-3 minuta na vatri pa se skloni, poklopi i ostavi 15tak minuta. Sipas paprike i ostalo u tegle, a zalijes maslinovim uljem. Ja sam jos dodavao origano, korijander. Moze sta ko voli.

Ovo sam na kraju provalio, kada sam potrosio sve paprike.

Onda u teglu. Jedne sam prelio maslinovim uljem. Drugu dodao ulje, sirce, so.
