Ključ je u tome da se ne doda kisik nakon aerobne faze metabolizma kvasca, dodavanjem kisika u anaerobnu fazu može uzrokovati oksidaciju.
Nekome su se desili i nepoželjni esteri.
Uglavnom, nije preporučljivo ako radiš drugi dan kuhanje, ako radiš isti dan oba kuhanja onda se i u drugi wort dodaje O2
